For chili oil, my personal favorite is Lee Kum Kee Chiu Chau Chilli Oil. It has more umami and garlic kick.
Mix a bit of it with asian red vinegar for a great potsticker/gyoza dipping sauce with kick.
You can stir fry it with vegetables or in noodles or practically everything. The oil makes it versatile. Use anywhere you would use oil or olive oil in cooking.
