But if you don't want to check the tags, basically it's doing the same as what a lower level infected is doing. But since it's so much stronger due to longer growth period, the same movements it would have done as a lower level infected rips off limbs rather than subdues the individual.

IIRC, almost all of the infected behave somewhat similar for runner, stalker, clicker, bloater, shambler and rat king etc.
Their differences are solely how they approach you offensively or defend themselves slightly differently. But whether they stalk first, or run straight on, or slowly tank themselves at you while squirting spores or whatever, they always run up and attack via pulling, biting slashing etc.
It's just that the infected has been exposed for many years to the point of manifesting into an ultra strong, highly fungus covered bloater. So the bloater approaches, does the same thing it did if it was a runner or stalker or clicker, but its strength rips off your head and limbs vs slashing it in the lower level infection stages. The additional fungus makes it move slower and it is less capable of echolocation, but also acts like an armor.
That's one of the interesting facets for the infected in the TLOU universe. They all basically start as humans, end up as runner/stalkers when infected in the right circumstances, and then as time passes, basically turn into clickers then bloater (normal)/shambler(water) or rat king (isolated and confined ecosystem?) depending on environment. It's not different strains of different things like other zombie movies. It's all the same (pardon the pun) "root infection" but different stages of development of like a plant.
