The gimmick with hot ones is the attempt to humanize celebrity, by having it be a normal context (having a conversation over wings), without an audience, and having the person being interviewed have to drop some of the facade because "holy crap this is spicy, I cannot maintain this mask under these conditions". There's a cynical view that in some cases this just allows a different mask to be put on but that's the idea, and it comes across far more genuine than most promotional interviews that people do for things, like late night, which is totally unwatchable for obvious reasons:
