Because Republican policies are deeply unpopular with a great deal of Americans, and the striking down of Roe v. Wade was seen as a Republican "victory" which also did not make them popular.
You can pin that on McCarthy if you want, but a good deal of the unpopularity of the Republican party has come from the Never-McCarthy nutbars who also happen to be proponents of Trump and The Big Lie. Hell, Boebert won re-election in 2022 by just 546 votes, when just two years prior she won by 26,512. That's the smallest margin of victory in the entire time the GOP has held that District, since at least 2011.
