Ditto on the opinion of Dark Table. Interesting concept and once upon a time, they had a chef that was worth the visit with its blind tasting concept
Truth of the matter is that Calgary is too small of a city to host a lot of these niche type restaurants. You'd find way more of these in the biggest cities in the world (NYC, Tokyo, LA) and major touristy cities (Las Vegas and Niagara Falls)
For what we have here in Calgary, I'd recommend Japanese village or OMO or Tobe. Three restaurants that do Teppanyaki where you sit around a grill and a chef cooks the food in front of you while cracking jokes and pulling tricks like juggling his knife and serving forks, tossing pieces of broccoli for you to catch them in your mouth, onion volcanos and grease fireballs
