Ok, so my setup may not be the best but the coffee gushes out despite 2000 ft-lb tamping so I’m convinced pressure is part of the equation. Apparently Silvia’s can ship at 11 or 12 bar from the factory.

I ordered a pressure gauge, hooked it up, but now water is gushing from the top of the basket. Turns out the gasket is shot…20 years of abuse I guess.

I’ll replace that and try the pressure test.

My hunch is that your beans are too old, or your grinder just isn’t cutting it anymore - likely the beans though
