Yeah, it also depends on what you spend money on and if/ how you travel.
Eg if you buy groceries at a place that takes Amex the Amex Cobalt (with 5x on groceries/restautants) is probably the best choice.
But not if you do superstore/costco (no Amex) or Walmart (which doesn't code as grocery spend).
Some cards have extra perks at specific retailers which add value depending on your shopping patterns. Eg RBC credit cards come with 3c per litre at petro can, plus you get petro points. But if you already have AMA 3x per litre at Shell plus Air Miles plus credit card points might be better.
You can keep going down the rabbit hole basically forever. Prince of Travel is a great resource for using credit card sign up bonuses/spending to take fancy trips if that's your jam.
