At the same time I think people aren't being fair if they think everything is coming down to wages. I know quite a few companies hiring right now who would pay way above market value and they can't even get job interviews.

You're right, it's a combo of wages + working environment. Something that yes, more Unions would help with.
Take AC as an example: it's not only that they're chronically underpaying people, it's that the conditions of working for AC are also abhorrently nightmarish and basically preclude you for living among the normal population. People used to have a romanticism about the industry- that was murdered when they were hung to dry for a couple years. Now no one is left to be brutally mistreated.
