Shooting someone in your house because they're stealing something would be considered "defense of property", and is not a legitimate reason to discharge a firearm in Canada.

The first part I agree, that has been long established a standard. It's your duty as the one defending yourself to do everything you can to de-escalate the situation and not use force unless absolutely necessary for the protection of your life or your family's. You can yell and bang around and try to get them to leave. HOWEVER, it is not your duty to escape from your house (from a legal perspective). Whether you choose to do that or not is entirely up to you.
