Rocky 1 is a legitimately great drama. Won best picture and best director at the Oscars (back when they were legitimate awards). Totally worth it. I would say the same thing about Rambo 1, but there's a lot more action in that one. First Blood is still a great story.
Die Hard 1 is classic cinema, but it must only be viewed at Christmas! Alan Rickman plays the best villain ever.
Terminator? Sure, it's fun, but I find that whole series overrated. Still some classic stuff in the first two films.
Godfather series has been discussed above. The first two films are fantastic, but they are a little slow at times, so if you're not into gangster films you may not love it.
Van Damme is purely action schlock. You're not missing anything unless you're into that type of movie.
And Schindler's List? Look, it's long and in black and white, but I cannot think of a more important story put to film. Spielberg put aside his blockbuster tactics and truly made a fantastic and important work of art. It's a film you have to see at least once, and then you'll probably never ever want to watch it again.
