Hah my fiance and her folks are from Tianjin (northeastern China) and the way they cook is super salty. Like has been mentioned, the different regions of China have different food qualities, some salty, some sour, some sweet, etc.

I have to say though, NE Chinese food is gosh darn deilicious and I thank my lucky stars every time I get to eat dinner over there.

Egg drop soup (all forms) makes me weep with happiness...ditto for boiled cabbage.
