Do we really pay that much more than you would for the same knife in this Kitchen district you and Wormius speak off?
I know many brands lower end knives use more modern manufacturing, but do you have issue with the price of the knives that are "hand made"? For me, with proper care and attention, I can have these knives for most of my adult life. I see good value in that. Plus the design and finishing is usually a very nice touch (damascus steel and acid etching is some beautiful stuff).
My problem is that I want many more knives now. It's a want vs. need thing. I don't need them.
