Foo Fighters in Seattle in 2005. Weezer opened and it was awesome. Topped the night off by accidentally (as far as I could tell) stumbling into the Central Saloon, which as I understand it, is where pretty much every big band that came out of Seattle in the 90s got their start. It was a great way to cap off the night.

Chris Cornell at the Royal Theatre in Victoria in 2011. Such a perfect venue.

Honourable mention goes to an impromptu Tim McGraw 'show' at - of all places - Saltlik in Banff around 2002. My then-girlfriend and I just finished dinner and were in a hurry to get back to our hotel. As we were about to head downstairs to leave, our server all but insists we stick around for "maybe one more drink at the bar... Trust me". Lo and behold, Tim McGraw had dinner downstairs and appreciating the fact that no one bothered him, decided to show his appreciation with a quick acoustic set... Not the biggest Tim McGraw fan, but an amazing experience.
