NMCs and and NTCs are primarily used as a tool to prevent a player from being traded to losers, small markets, and crappy climates, so most of the Canadian teams and places like Buffalo, Columbus and a few others are usually the targets. Secondly, they are more often used to push a trade to a contender.

In rare cases, players will put contenders on their list to just try and prevent any kind of trade (Kadri for example who wanted to stay in Toronto).

I think it's cute that people think Gaudreau would be like Kadri and add contenders to his no-trade list just to try and remain in Calgary for a few more months rather than chase a Cup. I could be wrong, but I just don't see that happening.

Of course, this assumes he is still unsigned at that point and that the Flames are on the outside looking in. I agree with others, the worst position to be in would be squeaking into the playoff, keeping him for the low chance of a dream run, then losing him for nothing. That would suck. That is why unless this team is showing they can win it all, then don't take that risk. Only s SC would justify that. If they are struggling at all, just tear it down if Gaudreau can't be retained and trade him. Don't get stuck in hockey purgatory just to let him go UFA.
