So it comes down to trust. Trust that person is not lying about the medical condition or the alleged protections in place. Or create a team policy that a real doctors note is needed to confirm (doesn't need to confirm what) that vaccines are not an option.
Doesn't seem like an overly complex objection to counter with a solution.
