Halo 1& 2...obviously.
Star Wars: Knights of the Old Republic 1 & 2 are two must haves as well. Definitely the best RPGs on the system. The first KOTOR is was rated the best game of 2003 by many different places. Don't let the Star Wars title scare you off though - you don't have to be a Star Wars geek to enjoy these games.
Elder Scrolls 3: Morrowind is one of my favorite games of all time. Massive RPG where you can go anywhere and do whatever you want at any time. You can play the game for a year without even touching the main quest.
Shenmue 2 is another great game that most people will never play. I guess you'd call it an adventure RPG. Brilliant story. Don't worry about jumping into the series without playing the first game - the game comes with a 10 min recap video of the first game and an hour long movie-style recap.
For racing games, it's between Project Gotham Racing 1 & 2 and Burnout 3. Both are great games. PGR is more of a simulation while Burnout 3 is more of an arcade game.
