I am willing to bet there is a correlation between life expectancy and a population of people living around animal poo. One dog might not make a huge difference, but it's like littering. If you let people get away with it, it can eventually become a hazard.

I would disagree. Poo helps fertilize fields, increase crop yields, and exposes people to potential immune-challenging events. One of the big problems today is cancer and auto-immune issues. That is because we are all "Too Clean". We protect ourselves so much, that these rates are headed upwards.
I understand that being clean, aseptic technique, washing hands, etc. are all important, but I think they all have their place. We live in such bacteria-free worlds, that our immune systems have nothing to do, and in a lot of circumstances, somehow end up causing issues for people at unprecedented rates.
Keep in mind that farming includes animal husbandry as well as crop farming, which also uses poo to fertilize fields and crops:
