Here is a great little place I visted in Chile in 1994:

The clear water of Rio Penitente , flowing through the farm, offers excellent trout fishing, hiking and horse riding provide healthy exercise under the windswept skies. At the end of the day you are ready for an "asado" of lamb grown at the farm and fine Chilean wine, served by the friendly staff.

Watch out for the friendly staff though - one male staff member was trying to seduce the men in our group. I guess it gets real lonely in Patagonia.
