Wild Palms. The original was only a mini-series, but I'd love to see more in that story-world, updating it for current politics and technologies.

A Remington Steele reboot (still with Pierce Brosnan) would be a lot of fun.
Also, The Grinder was brilliant and should never have been cancelled.

I was going to also say 'V', and then I saw that they did do a remake of it in 2009.
