As for pans, I've been using those Heritage Rock ones but even with a lot of care the surface breaks down in less than a year. I use mine in the oven so maybe that shortens their life. Next time I buy I'm going to try carbon steel.

Depending on which set of Lagostina cookware you have, it is possible to buy replacement handles and knobs for some of their cookware. I have found them on the Lagostina website.
I know for sure you can with their original Classic pots and pans.
