Since it's all new storylines, new characters, and mostly new planets, etc..., people can just sit back and enjoy the ride. They also have 25-30 years of timeline to work with before the events of TFA, so this show could potentially continue for several more seasons.

Thats a very good point, but its not even that, its that this is the kind of thing that Star Wars fans want.
Clear, concise stories, characters that we like and are relatable. I mean hell, the Star Wars Galaxy is enormous do they really need to keep going back to the Skywalker well over and over again?
I remember joking with my friends that the Galactic Empire and the Rebel Alliance should announce a temporary truce and hold a Summit to deal with what I term 'The Intergalactic Skywalker Problem.'
That one family has definitely caused far more than their fair-share of InterGalactic strife and damage.
The two sides should agree to an armistice in order to exterminate the Skywalkers and then go back to their regularly scheduled intergalactic conflicts over ideological differences.
