I was kidding earlier with my conspiracy theory. This is literally impossible. The current term ends on January 20th. There is no one who has the power to re-schedule the election. There are shenanigans that can be pulled with the election results, to be sure, and those have been discussed in here, but it is not possible to extend a Presidential term.
If Pence stepped in as President, unless re-elected (or at minimum "re-elected"), he would cease to be President January 20th, 2021. There is no way around that.
