For the vegetarians:

Good fresh 16 grain loaf. THe more grains the better
Dijon mustard (I have a jar of homemade tarragon mustard)
3 slices smoked tofu (you can buy that in most stores now)
Aged white cheddar
cucumber coins
salt and pepper those coins up good
tomato slices
romain lettuce
spread on ripe avocado
bread

For the vegans out there: (this is a little more labour intensive but well worth it, thanks to gord for showing this one to me)

Get a good fresh square italian bun and toast it up
spread on the hummus (preferably homemade)
then sizzle some half in rounds of eggplant in a skillet with salt and olive oil
put a generous sprinkle of nutritional yeast on each side of the eggplant and sizzle until it turns golden brown
put those eggplant rounds on the bun with hummus
top with tomato and alfalfa sprouts
serve open faced
