These sorts of changes should be made not exclusively on determining nature and level of "offense." I think you are right that the Aunt Jemima and Uncle Ben depictions are likely not altogether offensive, but I think legitimate objections can be raised on the basis of what we wish project as a society. I think there is in the images and also the names a sense of lionising or white-washing American slavery by presenting them as innocuous cultural tropes. Objection on those grounds is sound, in my opinion.
