Pepperoni, Mushroom, and Green Pepper for me (the Montreal all dressed). This is the simplest topping combination that gets you all the good pizza flavours of spicy, salty, savoury, and sweet. You can expand on this with additional meats or types of pepper but the basic form is so good.

I completely agree with you on olives but spinach is a highly underrated pizza topping. Its shape allows easy layering on top of meats, it handles heat better than most greens, and it adds a nice bitterness to contrast the saltiness.
