I say ask her out while at work. You see her only what once a week twice MAYBE. When the hell else are you going to do it? To me the waiting for her to get off work seems kind of creepy but who knows, she might find it "special" that you took time out of your schedule to come ask her out.
Funny you should mention asking women out at the gym because I was just reading an article the other day at the gym about this very topic. Apparantly it's the best place to do it because it's so easy to strike up a conversation or making an introduction (asking for a spot, etc.) plus you know that you share the same interests. The do warn about asking women out who go to the gym with as much make-up on as if they were going to the bar and are afraid to sweat (what the hell are you going to the gym for anyhow?)
