The problem is balancing the need to review egregious mistakes like that, and the fact that coaches will abuse the ever loving crap out of the rules.
IMO the solution is this: the coach has 10 seconds after the incident to indicate he wants to challenge. If that's an offside, then it's from the moment of the off side. Officials allow play to complete, then go back and review. No letting team staff watch numerous replays beforehand. If the challenge fails, delay of game penalty. That's about the best chance we have to bring video review back to where it was intended: overturn egregious calls only.
