I think the title is a bit of a red herring when it comes to referring to Skywalker as a family name. To me This doesn't mean Rey is Luke's daughter. I think it means future force users will identify as "Skywalker".
Skywalker becomes the term used to describe a force user that balances between Sith and Jedi.
Anakin rode the line between Sith and Jedi, Luke walked that line, and it looks like Kylo and Rey may as well.
Sith = Dark
Jedi = Light
But both of those teachings were flawed and a balance was never found.
Skywalker = Balance and I think Rey will be the first “Skywalker” in this sense.
I think this also makes sense if Luke was the “Last Jedi”.
Episode 7 was about the force awakening, episode 8 was Rey learning of the Jedi (and the end of Jedi if Luke was the last), and now episode 9 will be her learning about the Sith and ending the Sith (crashed Death Star, Palpatines laugh). Then she ends Jedi and Sith an creates a new title of force users called Skywalkers - cue the end of the Skywalker saga.
