The Galaxy is a big place, makes sense than a group of Misfits would have no clue who Thor is (although they did connect them by having Rocket know of Nivadalir). And both knowing the Collector and Knowhere.

Yep, and Bruce had been away for 3 or 4 years in the time he was gone he missed the origin of Spider-man and Ant-man. So his joke "wait there's a Spiderman and an Antman." was a nod to the consistency they have shown in this.
Dr strange used the time stone to undo all of the damage of his film, so there is no reason for anyone to have known who we was.
