There used to be quite a few articles that were easy to find, as I remember one from Hollywood Reporter or a magazine of repute, but now they are not popping up transparently on google.
The gist was basically this :

Critically acclaimed actor, Mickey Rourke spent months researching and preparing for the role of Ivan Vanko in ‘Iron Man 2’. In the 2010 sequel, Rourke said he spent the time trying to develop a more rounded character. But, was extremely upset when the scenes he filmed ended up on the cutting room floor. In an interview he revealed that he is not too happy with Marvel studios. “I’m not a Marvel fan… I did, once, a movie for Marvel… and they cut the whole ######ing thing out…”

It was also pointed out that Kate Mara was pretty much removed from the film, with only one scene left in. Most people wouldn't even remember that she is in the universe.
Iron Man 3 is easier to find :

when Black was developing the film, Killian was going to be gender swapped, but Black was forced by certain Marvel execs to make the character male for fear of negatively impacting toy sales.

Splitting one character into two reduces the impact of both, clearly. Instead of a strong female antagonist, we are left with 'meh'. The nonsense surrounding Iron Man is one of the things that led to the end of Ike Perlmutter, so I guess that part worked out for the best.
