Really? I mostly drive from Calgary to Banff / Lake Louise / Golden etc. I have really spotty cell service once I leave the city, Freedom Mobile isn't the best for that. So I'm often a half hour from cell service or more. Now, if I drove to where there's cell service and called for help, it might take an hour plus for someone to get dispatched. Do you want to leave the thing suffering for that long? I kind of don't.

Of course, the flip side of this is that it's always possible that a) you've misjudged how badly hurt the animal is and it's going to be fine, or b) further to that, whether it's dying or not, you could get badly hurt by approaching a wounded wild animal (even a deer), which is why even dragging it off the road is potentially inadvisable.
