I tend to think that looking back on it, George should have probably had Fett carve up someone like Chewie and knocked out Solo and had a one against one battle against Luke, a battle by the way of science vs magic. The wizard versus the gunslinger.

I think the reason Fett seemed so bad-ass and became such a legend (considering that he was really a minor character in the movie) is precisely that he didn't do anything. I agree that his death was dumb and shouldn't have happened, but I think that his character really would have been diminished by any actual action seen, unless it was a really one-sided win for him.
The temptation would be for the good guys to have to win the fight or at least escape, in which case he becomes yet another supposedly tough character who turns out to not really be such a big deal.
The only real opportunity I see to have done more with Fett in a good way in the original trilogy would have been for him to capture Han himself in a very one-sided fight, rather than have Vader do it and hand him over. That would have taken away from the more important demonstration of the hopelessness of fighting Vader in that scene, though.
