It usually has to do with the quality of the numbering job.
The jersey city / sport check ones come right from the NHL factory and the name bar and numbering are usually heat pressed on.
The Fan Attic ones are usually stitched from Great Plains who do the official stitching for the Flames, and the numbers and name bar are usually stitched on and a much better quality.
I know this was the case with the Reebok jerseys from Jersey City, Champs, Sport Chek, compared to ones from the Fan Attic but haven't checked with the Adidas jerseys if it's the same situation.
