I think you're mistaking us as fans 'knowing' what will need to happen vs a character in the movie having the extra knowledge
Just because Strange saw 1 way that they defeated Thanos, does not mean that 1 way showed them all being brought back to life.
If he see he dies in every scenario, he wouldn't be shocken up. He knew no matter what he was going to die.
