I'd be curious for someone to chime in - I'm happy to put blind faith in a restaurant and order my burgers medium when given the option, but hesitate to do it at home... I've often read that the meat needs to be freshly ground to safely cook less than well-done - true story? Or can I safely cook my burgers to medium when using pre-packaged ground meat from the grocery store?

I have cooked burgers to medium before with packaged ground beef before without issue. I use beef from Coop. Usually I will grind my own beef though. It seems as though well done is strongly recommended though even with fresh ground beef because our beef is not irradiated like US beef is.
