Lid open would definitely leave the middle less well done.

I'd be curious for someone to chime in - I'm happy to put blind faith in a restaurant and order my burgers medium when given the option, but hesitate to do it at home... I've often read that the meat needs to be freshly ground to safely cook less than well-done - true story? Or can I safely cook my burgers to medium when using pre-packaged ground meat from the grocery store?
