Well I think you went too far the other way in saying the NHL is randomness, the NHL is probably the closest to the in between you seek out of all the professional spots.

It's quite predictable in many ways, like knowing if your team is likely to be contending for a cup, battling for a playoff spot or battling for a high pick, with advanced stats guys chipping away at providing more reliable info with each passing season.

Even just those three categories gives enough solid understanding of what a season may look like, with a decent amount of unknown "randomness" and outliers to make things fun to actually follow and not just understand who will likely win all the time.
