It was kind of intentional, when Lucas designed the ships for the OT he wasted their paint jobs to lack color or even vibrancy. He wasted Imperial Ships to basically look functional. so that's why the White color.

For ships like the Falcon and the ships of the Rebellion he wanted the ships to look wornd own and threadbare. Basically it was a universe run in a very dictatorial fashion where there was no joy or color or even pride.

then in the OT he wanted the ships to be painted and shiny and more art then anything else to show that the republic was this vibrant democracy where people were allowed to express themselves, then as the OT moved through you saw that Dull looking coming into play.

I still really loved the Venator class Cruisers, and I rank them right up there with the design of the Star Destroyers.




In the book Dark Lord the Rise of Darth Vader they have these smugglers seeing a Star Destroyer for the first time and their basic comment is

"It looks mass produced and doesn't have the artistry that the Venators had"
