Yeah, from there mankind united and took to space using the Vulcan technology, and were able to conquer and enslave the Vulcans, Andorians and Klingons.

During the events of Enterprise there was a rebellion by the alien races but it was pretty close to squashed when the Mirror Empire took the Defiant and its 100 year in the future technology. Originally the Empire triumphed and Hoshi became the Empress.

But apparently there are still rebels in the Discovery timeline.

At some point after this the Empire triumphs and Vulcans become a part of the Empire instead of a slave race. Spock becomes the first officer on the Enterprise after James Kirk murders Captain Pike.

The Enterprise incident occurs and in a series of books we find out that Kirk becomes the Emperor and is considered one of the most brutal emperors in history. To show his brutality he has McCoy and Checkov and Scotty executed on the suspicion of treason.

Spock uses the Tantalus device and overthrows Kirk. He becomes the new Emperor and begins to enact reforms. He renames the position of Emperor as Commander in Chief and he begins to soften the slavery of other races.

Kirk flees to the Klingon's and brings together an alliance of the Klingons, Cardassians and other former slave races who reward Spocks reforms by attacking the Empire. They enslave humanity and as a gesture of punishment destroy Earths Eco-system.

What happens to Spock and Kirk isn't really covered very well, except that at some point he leads tries to seize power again with the help of the Mirror TNG crew.

Then we flash forward to the events of DS9.
