In Banff - lots of hiking, canoeing, hot springs, etc. Beavertails. Get a Beavertail. Also recommend to stop in Canmore for poutine at La Belle Patate, if it has reopened.
Also, if you're renting a car, I think a fun drive is to go into Kananaskis and the drive the Smith-Dorrien road to Canmore, and then HWY1 to Banff.
