An easy one I like is the big Costco chorizo (Freybe's brand, I think) sliced about 1/4-1/2 inch thick. Cook hot in cast iron, flip, add bell peppers and chunks of white onion. When veggies softened, add crushed garlic. Deglaze with red wine and sprinkle Italian seasoning. Reduce the wine a bit and you are done. Serve with pasta, or if you are awesome like me, polenta(not the pre-cooked sliced log, cook it fresh, it's easy). I can prep and cook the whole meal in about 20 minutes.

Chorizo sausage are also great in paella which is also fairly easy to make.

The Costco spicy Italian sausage is easy to make into a pasta sauce. I start from frozen, defrost slightly then remove skin and cut into chunks. Fry, add diced onion, cook those and dump in a can of diced tomatoes. There is enough seasoning in the sausage to flavour everything, though feel free to add garlic before the sauce. Simmer for hours if you have time. Easy and awesome. Red wine always helps at the end.
