Some Lynel tips if you want them:

You don't need to dodge or parry at all, actually. Just shoot it in the face which stuns it, then get close to the front or back and a prompt will come up to mount it! Equip your strongest weapon, and then can get 5 hits in before it launches you off its back (unless you don't have enough Stamina). When you fly off, shoot an arrow on the lower neck, and if you're lucky and crit again, you can actually mount up right away.

I found this one out by accident fighting one. Saves you so many weapons!!
