Also if you have an issue with raw eggs, you can sous vide it at 130 for any raw preparations. It is pretty much indistinguishable from a raw egg. Raw eggs don't bother me, but figured that out when we were making a chocolate mousse cake and some who was pregnant was suppose to come over. She never come over so didn't have to go through with it, but now I know.
