Also, coconut milk added to rice when cooking is an easy coconut rice. Goes well with the curry. I usually do 1/3 can in curry, 2/3 in rice or 50:50 curry/rice. No need to leave open can of coconut milk with no idea how to use it up. I do suggest shaking the can before opening though as it sometimes separates a little bit.

If I only need a little bit I pour the rest into a medium size ziploc bag and freeze it. You can then just break chunks off as needed.
