i have heard that there is no issue if you basically use a ton of ice. have a giant ice bath in your preferred cooking vessel with your meat before you leave. stick your sous vide machine in and leave. turn it on at the appropriate time before you get home (or earlier since you can set it to a temp that just keeps it warm). then take out of the bag and sear if you want
