Hope things work out for you because that is absolutely ridiculous.
To be fair, my engineering brain tells me that epoxy is ridiculously strong and I'd be more scared of breaking my granite than the epoxy failing. But this is just crazy.

You should draw a line halfway up on the inside of your sink...
And NEVER fill past it...
You know...just to be sure.
