Sign out, make sure it prompts you to remove Find iPhone.
When I have to wipe the phones at work, I take the extra step of wiping, and then setting up again with no Apple ID. Just to make sure it gets all the way through. If it's still tied to your ID that is actually one of the later steps in setup. Then I wipe it again.
