It depends on your personal tastes and what you are looking for. They are all so vastly different.

I would recommend TOS, TOS Movies, Star Trek (2009) movies, DS9 (best series overall). I know many who would disagree with that. I just have difficulty enjoying TNG, Voyager, and Enterprise. I find them really cheesy when viewing now.

TOS has that great 1960s retro ness to it that keeps it fresh for me (like going back to watch 1960s Batman) and Stephen Fry explains very well what makes TOS' structure so classic and how most of human history can be explained in Star Trek plots:
