I got 73 evolved during my last lucky egg
Could probably get a couple more in too, if I hadn't dawdled a bit. Favourited the ones I wanted to evolve and then sorted my pokémon by faves before using the egg. Unfavourited it as soon as it was evolved, so I didn't have to waste time scrolling through the list of them at all. Also set a 30 min timer in my iPod to prevent needing to check how much time I had left. I did only get 3 new pokédex entries that time around though, and those obviously take a little bit longer.
