How are the London Knights able to veto that name? It's the same league (CHL) that has the Lethbridge Hurricanes, Kitchener Rangers and Portland Winterhawks (and look at the uniforms of the latter two teams!)

Because the London Knights hold a trademark in Canada for "Knights" as it relates to the operation of a hockey team. It doesn't matter that the NHL is bigger, Foley would still have to negotiate around that hurdle. Clearly the Hunters are demanding too much money to relinquish the mark.
I was curious, so I did a search on the CIPO for "Lethbridge Hurricanes", and it appears that the junior hockey team
did transfer the trademark to the Carolina Hurricanes in 1997. Obviously with an agreement that the junior team would continue using the name as well.
Unrelated, but when the L'Canes
trademarked their Tazmanian Devil logo in 1997, Warner Brothers opposed it. The Canes' abandoned the trademark in 2001 before that resolved.
And I have no clue what
THIS is supposed to be, but sufficed to say, the team hasn't actually used this logo yet.
